Black Forest Cake

Black Forest cake combines the flavors of cherries, whipped cream, and a rich cocoa sponge. Although it originates from Germany, it has also become a popular dessert in our region. Traditionally, it is flavored with cherry brandy or cherry liqueur, which can be replaced with cherry juice in a non-alcoholic version.

- 225 g powdered sugar
- 50 g Dutch-process cocoa powder
- 9 g baking powder
- 4.5 g baking soda

- 75 g canola oil
whipped cream
- 500 g vegan whipping cream
- 40 g powdered sugar
- 20 g whipped cream stabilizer
- 1/2 tsp vanilla extract
cherry filling
- 350 g cherries (fresh or frozen, pitted)
- 50 g granulated sugar
- 1 tbsp lemon juice
- 50 ml water
- 30 g cornstarch
- 50 g kirsch (or cherry liqueur)
assembly
- 90 g kirsch (or cherry liqueur)
- 50 g 70% dark chocolate (grated)
- 1 handful cherries
