Kapustnica is the Slovak Christmas Eve soup, and the fasting version — no meat, no sausage — is the older one. Sauerkraut goes into the pot with its own juice, dried mushrooms, and bay, and simmers for a full forty minutes before anything else happens. Dried plums go in after that, and they're what makes it sweet-and-sour rather than just sour.

It's thickened with a proper roux: onion softened in oil, flour and sweet paprika stirred in and cooked until the mixture turns light brown. Paprika burns fast at that stage, so keep the heat down and keep stirring.

Ninety minutes, four servings, and 190 calories a bowl. Like most sauerkraut dishes it's noticeably better the day after you make it.

How to make it

  1. Place the sauerkraut with its juice in a pot, cover with water, and add the dried mushrooms, bay leaves, and a light seasoning of salt.
  2. Cook everything together for about 40 minutes until the mushrooms and cabbage are soft.
