There is no shortcut here and the recipe doesn't pretend otherwise. The onions cook for forty-five minutes in total — fifteen sweating under a lid, then another thirty, still covered, until they've gone deeply brown and collapsed into something jammy. Turning the heat up to speed it along gives you scorched onions and a bitter soup, and that's the whole thing ruined.
A little sugar goes in partway to help the caramelisation along. The white wine deglazes everything stuck to the bottom of the pot, which is where a lot of the flavour has ended up by then.
Ninety minutes, four servings, and the cheesy toasts are not a garnish — they're structural. Make them.
