How to make it
- In a small saucepan, combine sugar and water in a 1:1 ratio (for example, 100 grams of sugar to 100 ml of water).
- Bring the mixture to a boil and stir until the sugar completely dissolves, creating a clear syrup.
- Let the syrup cool completely, then pour it into a sealable jar or bottle.
- Store in the refrigerator, where it will keep for several weeks.
- You can brush the pastry with the syrup before and after baking. For non-yeasted doughs, it’s enough to brush it right after taking it out of the oven while it’s still hot.
- The sugar will caramelize on the surface during baking or finishing, creating a beautiful glossy shine.
