Vegan Brownies with Redcurrant Jam
I was looking for brownies similar to the vegan brownies I tasted in Manchester. Until then, I hadn’t been very interested in brownies – I’m not that fond of chocolate. This brownie was different; the flavor wasn’t just about chocolate. I suspected it must contain jam, and I was right! The jam adds freshness and an extra layer of flavor.
Ingredients

- 75 g all-purpose flour
- 75 g caster sugar
- 60 g 70% dark chocolate
- 60 g redcurrant jam
- 55 g vegan butter
- 20 g cocoa powder (unsweetened)
- 30 g walnuts (chopped)
- 1 tbsp ground flaxseed
- 45 ml water
- 1.5 g baking powder
- 1 pinch salt

How to make it
- From this amount of ingredients, you’ll bake a cake about 23 × 14 cm in size (a small baking tray or dish) with a height of around 1.5 cm. If you want a larger one, double the ingredients. At your own risk—I’m not responsible if you eat the whole tray in one day!
- Begin by finely grinding 1 tablespoon of flax seeds (a coffee grinder works perfectly) and pour 45ml of water over them. The mixture will thicken and create a gel - your substitute for 1 egg.
- In one bowl, combine the plain flour, cocoa powder, baking powder, and a pinch of salt. Mix everything well.
- Melt the vegan butter in a saucepan over a double boiler. Once the butter melts, add 30g of dark chocolate.
- Melt everything and mix it with the butter. Then add the sugar (75–180 g) and stir again. Heat the mixture gently, making sure it doesn’t boil. Using more sugar will give you shinier and, of course, sweeter brownies. Adjust the amount to your taste, but brownies should be quite sweet.
- Add the flax egg substitute and mix well. You should immediately notice that after adding the flax, the mixture becomes more slippery, as if you had added an egg.
- Fold the melted butter and chocolate mixture into the dry ingredients. Mix well to create a thick, glossy, and well-malleable mixture.
- Stir in the chopped walnuts, chopped chocolate, and redcurrant jam (or any other tart and runny jam) until everything is incorporated into the batter.
- Spread the batter evenly on a baking sheet lined with parchment paper.
- Bake in a preheated oven at 180°C for about 20-25 minutes depending on your oven, until you can insert a toothpick that comes out with a few crumbs of batter, but is not completely wet with batter.
- Let cool completely so it doesn't fall apart, then you can cut and taste.
