Vegan Gnocchi in Sage Cream Sauce

These vegan gnocchi in creamy sage sauce are bursting with umami flavor and pure perfection! Sage butter, garlic, and nutritional yeast create a combination that would make any Italian restaurant proud.
Ingredients

- 500 g gnocchi
- 200 g marinated tofu (optional)
sauce
- 50 g vegan butter
- 10 g sage (leaves)
- 10 g garlic
- 200 g soy cooking cream
- 20 g nutritional yeast
- 1/2 tsp salt
- 1 tsp lemon juice
- 1 pinch black pepper

How to make it
- Bring a large pot of salted water to a boil. Once the water is boiling and the sauce is almost ready, add the gnocchi. Cook according to the package instructions—usually about 2–3 minutes. When they float to the surface, they are done.
- Then prepare the sauce, and if you like, at the same time sauté marinated tofu cut into cubes in a little oil until crispy. Set it aside for serving.
- Heat a pan over medium heat and melt the butter. Add the sage, chopped into larger pieces, and gently sauté for 4-5 minutes.
- Keep the heat moderate, then add the grated garlic.
- Stir in the soy cream, nutritional yeast, salt, pepper and lemon juice.
- Bring the mixture to a boil and adjust the seasoning to your taste.
- Fold the cooked gnocchi into the sauce and serve with tofu on top.
