BBQ Tofu Bowl

Tear the pressed tofu instead of cubing it, or grate it coarsely. The ragged surface holds far more glaze than a clean-cut cube, and glaze is what this bowl is about.
The BBQ sauce goes in last, on reduced heat, and only for two or three minutes. It's full of sugar — added earlier or over a high flame it burns black before the tofu is anywhere near done. Fry the tofu golden first, then bring the heat down and let the sauce thicken around it.
Press the block for a full fifteen minutes before any of that. Wet tofu won't take the marinade and won't crisp — it steams in its own water instead. Forty minutes, 35 g of protein.
Ingredients

- 300 g firm tofu
- 20 g soy sauce
- 15 g canola oil
- 60 g BBQ sauce
- 20 g maple syrup
- 1 tsp smoked paprika
- 1/2 tsp garlic powder
- 1 pinch black pepper
- 1 pinch salt

- 200 g white rice
- 1 red bell pepper
- 100 g broccoli
- 80 g corn
- 1 carrot
- 1 handful pickled onion
- 1 lime
- 1 handful fresh coriander

How to make it
- Wrap the tofu in a clean kitchen towel and press it under a heavy object for at least 15 minutes to remove excess moisture.
- Tear or coarsely grate the pressed tofu into bite-sized chunks.
- In a bowl, mix together soy sauce, canola oil, smoked paprika, garlic powder, black pepper, and salt. Add the tofu, toss well to coat, and let it marinate for at least 10 minutes.
- Meanwhile, start cooking the rice, slice the bell pepper and carrot into thin strips, and divide the broccoli into small florets. Sauté the vegetables over medium heat until they soften slightly and take on some color. Don’t be afraid to let them brown and caramelize.
- Heat a non-stick pan over medium heat. Add the marinated tofu and fry for 5–7 minutes, turning occasionally, until golden and slightly crispy.
- Reduce the heat, add the BBQ sauce and maple syrup. Stir to coat and cook for another 2–3 minutes until the sauce thickens and glazes the tofu nicely.
- Divide the rice between two bowls. Top with the BBQ tofu and cooked vegetables. Add pickled onion, a squeeze of lime juice, and fresh coriander to finish.
