Vegan Hollandaise Sauce
A smooth and glossy egg-free hollandaise that keeps its classic creamy character. Rich thanks to vegan mayonnaise and plant-based butter, with a subtle kick of cayenne pepper.

- 45 g soy milk
- 1/2 tsp cornstarch
- 120 g soy mayonnaise
- 80 g vegan butter
- 10 g lemon juice
- 1 pinch cayenne pepper
- 1/2 tsp kala namak

How to make it
- In a small bowl, whisk together the soy milk and cornstarch until fully dissolved. Set aside.
- Place the vegan mayonnaise and plant-based margarine in a heatproof bowl set over a pot of gently simmering water, making sure the bowl does not touch the water surface (bain-marie).
- Stir continuously over the gentle heat until the margarine has fully melted and the mixture forms a smooth, uniform emulsion.
- Pour in the soy milk and cornstarch mixture and continue stirring until the sauce thickens and takes on a smooth, glossy consistency. If the mixture begins to separate, lower the temperature and keep stirring until it comes back together.
- Remove from the heat and whisk in the lemon juice, cayenne pepper, and black salt until fully incorporated and silky smooth. Serve immediately while warm.
