Roasted Avocado with Yellow Cherry Tomatoes
Roasted avocado is a great side dish for light summer meals or barbecues. The combination of sesame oil with sweet tomatoes, garlic, and coriander stands out the most. I usually use avocado for sushi or sauces, but when I had more at home, I decided to try it roasted as well.

- 1 avocado (ripe)
- 30 g cherry tomatoes (yellow or red)
seasoning
- 1 clove garlic (minced)
- 1 tsp sesame oil
- 1 tbsp olive oil
- 1/2 tsp salt
- 1/4 tsp black pepper
- 1/2 lemon (juice)
garnish
- fresh coriander (or basil or chives)

How to make it
- Cut the avocado in half and remove the pit by striking it with the blade (not the tip) of a knife and twisting. The pit will come loose.
- Use a spoon to scoop out some of the avocado flesh to make more room for the tomatoes.
- Cut the tomatoes into quarters or halves.
- In a bowl, toss the tomatoes with the grated garlic clove, sesame oil, salt and black pepper until the flavors combine.
- Brush the avocado flesh with olive oil, then add the remaining oil to the tomatoes as well.
- Place the avocado on parchment paper.
- Bake at 180°C for about 20 minutes, until the tomatoes are completely soft.
- After baking, sprinkle with herbs and drizzle with lemon.
