Vegan Yugoslav-Style Sesame Pastry Swirls

Ingredients

- 250 ml plant-based milk
- 20 g fresh yeast
- 10 g granulated sugar
- 400 g all-purpose flour
- 150 ml canola oil
- 1 tsp salt

- 100 g vegan butter
- 75 ml vegan sour cream (or cooking)
- 1 tsp salt

How to make it
- Crumble fresh yeast into lukewarm plant milk, add 10g of sugar and a tablespoon of plain flour. Mix everything together and let it activate for 10-20 minutes.
- Meanwhile, combine the plain flour and salt in a larger bowl.
- Once thick foam and bubbles form, add oil to the milk with yeast. Pour the liquid mixture into the flour and work into a dough.
- Turn the dough out onto a floured work surface and knead until you have a smooth dough. Return it to the bowl, dust with flour and let it rise covered for about 40 minutes until it doubles in volume.
- While the dough rises, remove butter from the refrigerator, cut it into cubes and let it soften. To speed things up, you can briefly heat it in the microwave to 25–30 °C – about 20 seconds is enough after cutting it into small cubes.
- Before returning to the dough, prepare the filling from the butter. In a bowl, whisk together butter, plant cream and salt until smooth. Preheat the oven to 180°C.
- After rising, divide the dough into 2 equal parts and roll each part on a lightly floured board to approximately 35 x 55 centimeters. Spread the butter filling in a thin layer over the rolled dough.
- Roll up the dough and cut it to create a triangle shape with one blunt end.
- Place the Yugoslav pastries on a baking sheet lined with parchment paper. Leave sufficient space between pieces as they will expand significantly during baking. Brush the pastries lightly with oil and generously sprinkle with sesame seeds.
- Bake the Yugoslav pastries for about 15 minutes with fan, or 20 minutes without fan. They are ready when the top turns pink and golden.
