Homemade Seitan
TOFU+40g protein
Once you start making homemade seitan, you won’t be able to stop. It can be seasoned and prepared in countless ways. Its base is wheat gluten, which you can find in health food stores. Here is a recipe you can use as a starting point when making dishes such as svíčková or “duck.” I have also included a seasoning blend recipe that I often use with it. Seitan tastes best when prepared a day in advance and left to rest in the fridge for at least one day.

- 200 g vital wheat gluten
- 40 g all-purpose flour
- 200 ml water
- 20 ml sunflower oil
- 30 ml soy sauce
- 1 tsp salt
- 1 tsp smoked paprika
- 1 tsp garlic powder
- 1/2 tsp black pepper
poultry spice blend
- 1 tsp garlic powder (dried)
- 1 tsp ground coriander
- 1 tsp sweet paprika
- 1/2 tsp ground rosemary
- 1/2 tsp dried marjoram
- 1/2 tsp lemon zest (dried)
- 1/4 tsp dried onion
- 1/4 tsp turmeric
- 1/8 tsp black pepper
