Lecho with Chickpeas and Tofu Egg

The order is the recipe: onion first, peppers next, tomatoes last. Tomatoes are acidic, and peppers put into acid early stay firm however long they cook. Give them their few minutes in oil first and they soften properly.
The paprika goes in off the heat. Pull the pot aside, stir it through, then return it — a second too long on a hot base and it turns bitter, which is the classic way to ruin a lečo.
The tofu "egg" is fried separately and folded in only once everything else is done. Kala namak is what makes it read as egg, and its aroma cooks off fast — added to a simmering pot it's gone before it reaches the table. Forty minutes, four servings.
