Vegan Mushroom Pâté with Thyme
Creamy vegan pâté with rich flavors of golden-fried onions and aromatic thyme. Perfect as an everyday spread or elegant appetizer for guests.
Ingredients
Pâté
- 6 tbsp olive oil
- 300 g onion (diced)
- 25 g garlic (minced)
- 1/2 tsp dried thyme
- 500 g button mushrooms (sliced)
- 1/4 tsp black pepper
- 1 tsp salt
- 2 tsp soy sauce
- 2 tbsp nutritional yeast
- 4 tbsp shiitake mushroom powder (optional)
- 120 g vegetable broth
- vegan butter

How to make it
- Heat a pan over medium low heat, add oil and sauté the onion until golden, cooking slowly for about 20-30 minutes.
- Once the onion is golden, add grated garlic and thyme. Sauté briefly and stir until the garlic becomes fragrant—less than a minute is enough.
- Add the sliced mushrooms, mix everything well, and cook over medium heat for another 15-20 minutes until the mushrooms release their juices.
- Season with black pepper, salt and soy sauce while cooking.
- Before finishing the cooking, add nutritional yeast and shiitake mushroom powder to the pan.
- Pour the entire contents of the pan into a blender, add vegetable broth, and blend everything until smooth.
- Fill the jars with the pâté and let it cool. You can top it with melted butter and herbs. Serve the pâté with bread and cranberry jam. The pâté will keep in the refrigerator for at least a week.
