Strawberry-Filled Dumplings

Strawberry dumplings are a true early summer treat - it's exactly when the first strawberries and other summer fruits come into season. In this recipe, the strawberries are wrapped in a tofu dough, a great alternative to the traditional potato dough that also packs the dumplings with a good dose of protein. You can fill them not only with strawberries, but also with apricots, cherries, or peaches.

- 2 tbsp agave syrup (or other liquid sweetener)
- 20 ml lemon juice
- 40 g vegan butter (softened)
- 180 g coarse wheat flour
- 1/2 tsp ground vanilla
- 1 pinch salt
- 350 g strawberries
- 10 g vegan butter (for brushing)
- 10 g powdered sugar (for dusting)

- 60 ml water
- 2 tbsp granulated sugar (or liquid sweetener)
