"Marry me chicken" got its name from the idea that the sauce is persuasive enough to end an argument. The sauce is the part worth stealing, and it turns out it doesn't need the chicken: sun-dried tomatoes, garlic, oregano, thyme and chilli simmered into plant cream and broth, sharpened at the end with nutritional yeast and lemon.

The tofu is where the work goes. It's frozen and thawed first, which opens up the texture, then torn rather than cut — irregular edges catch the marinade and crisp properly. After that it sits in a spiced marinade for as long as you can stand, ideally overnight, before being tossed in cornstarch and fried.

How to make it

  1. If you use firm tofu packed in a container, you can freeze it overnight and then thaw it to let out as much liquid as possible and change its texture. If you use extra-firm tofu, simply pat it dry and, if needed, press it.
