Nori, capers and Dijon are an odd list for a chickpea ragù, and together they're the reason it doesn't taste like plain stewed chickpeas. Ground nori brings a saline depth close to anchovy, the capers bring sharp salt, the mustard emulsifies and rounds. All three go into the pan with the tomato paste and get two minutes to cook out before anything wet arrives.

Mash some of the chickpeas against the side of the pan near the end. Their starch is what thickens the sauce — otherwise you have chickpeas sitting in liquid rather than a ragù.

The tofu is torn, not cubed, then marinated and dusted in cornstarch. Torn edges plus starch is what gets it genuinely crisp. Sixty grams of protein per serving.

How to make it

  1. Pat the tofu dry with a paper towel and tear it into roughly 2 cm pieces. Mix together the olive oil, soy sauce, pressed garlic, oregano, sweet paprika, smoked paprika, crushed fennel, nutritional yeast, chili flakes, water, and vinegar to form a marinade. Toss the tofu in the marinade and set aside while you prepare the ragù — or ideally marinate overnight in the fridge.
