Overnight oats are a ratio, not a recipe, and getting the ratio right is most of the battle. One part oats to three parts soy milk gives you something loose and spoonable by morning; one to two, or swapping some of the milk for plant yogurt, gives you something thicker and closer to a pudding. Both are correct — it depends what you want to wake up to.
Everything after that is assembly. Ground flaxseed goes on top, date syrup or jam does the sweetening, and cinnamon or cocoa turns it into a chocolate version. Grated apple is the one addition worth making a habit of: it keeps the whole jar juicy in a way dried fruit can't.
Fifteen minutes the night before, 20 g of protein, and no cooking at all.

- 200 ml soy milk
- 1 tbsp ground flaxseed or chia seeds
- 2 tbsp date syrup

- 2 tbsp unsweetened cocoa powder
- 120 g grated apple

- 2 handful frozen mixed berries
- 1 handful dried cherries
- 2 tbsp hemp seeds
- 2 tbsp homemade fruit jam
- 2 tbsp goji berries

How to make it
- Grab a mason jar or other sealable container for your breakfast.
- Pour the oats into the container and cover with milk. I usually mix oats and milk in a 1:3 ratio - I like my oats juicy.
- For creamier oats, use yogurt or a 1:2 ratio instead.
- Add liquid sweetener, ideally date syrup or homemade jam.
- For chocolate oatmeal, stir in cinnamon or cocoa.
- Sprinkle ground flaxseed on top of the oats.
- I always add grated apple on top for extra juiciness and sweetness. Frozen or fresh berries work beautifully too, along with some goji berries or other dried fruit or nuts.
- For an extra special touch, blend the berries and mix them with chia seeds to create homemade chia pudding for the top layer.
- Close the container and store in the refrigerator overnight.
- In the morning, your vegan overnight oats will be ready. The oats will have softened and the flavors will have melded together perfectly.
